Caprese Salad
I LOVE dishes that make eating veggies easy. This simple but delish salad is definitely a favorite, we have had it 4 times just this past week!

I hope you love it as much as we do!
Ingredients: (everything chopped)
- Firm tofu (cubed & drained)
- Olive oil
- Seasonings: Sea salt, everything but the bagel seasoning, basil, oregano, dill, lemon
- Red onion
- Tomato
- Cucumber
- Olives
- Balsamic Vinegar
Steps below!

Step 1: Drain, & cube tofu. Add to the bottom of the bowl, drizzle olive oil, sprinkle (or dump lol) basil & oregano. Set aside in fridge

Step 2:
Chop:
1-2 Cucumbers
1 can olives
Chop or dice 1/4-1/2 onion
Step 3:
Add the veggies to the tofu bowl, add lemon or lime juice, sprinkle sea salt & dill.

Lastly chop tomatoes & add balsamic!
Optional:
Vegan cheese shreds + Spinach
