Full Recipe (Makes 3 Servings):

  • 1 block high protein tofu (Trader Joes)

  • 1-2 large cucumbers

  • 1.5 cups watermelon

  • 0.5 finely copped red onion

  • 3-4 tbsp balsamic vinegar

  • 2 tbsp olive oil

  • Sea salt + black pepper to taste
